  2. bring 4 cups of water to a boil and reduce heat to simmer
  3. put olive oil in skillet on medium heat. when oil begins to smoke reduce heat to medium low and add vegetables
  4. stir vegetables for 3 minutes and add abortion rice stir until evenly coated in oil.
  5. add 1/2 cup of white wine and stir till absorbed. Add 1/2 cup of water at a time, waiting for each half cup to be absorbed before adding the next half cup
  6. when rice begins to get tender add second half cup of white wine stir till absorbed and the add minced garlic
  7. add ginger, paprika and Cayenne pepper. then salt to taste
  8. continue adding water till desired tenderness and serve.

Olive oil - extra virgin is good, but light olive oils also work; Butter - salted. Vegetable stock - make your own vegetable stock or buy it. Dry white wine - Choose a wine you enjoy drinking. I prefer a sauvignon blanc, but chardonnay also works well. Peel and finely chop the onion and garlic, trim and finely chop the celery.
