The ingredients needed to make Pasta Carbonara:
  1. Make ready 1 tbsp Olive oil
  2. Prepare 150 grams Pancetta, sliced
  3. Take 500 grams Tagliatelle pasta
  4. Make ready 6 Egg yolks
  5. Get 150 ml Pure cream or creme fraîche
  6. Get 30 grams Butter
  7. Get 1/4 cup Chopped parsley
  8. Get 2/3 cup Grated Parmesan
  9. Prepare 2/3 cup Australian vintage (or any strong/bitey) cheese
  10. Get 1 Cracked black pepper to taste

When the pasta is done, reserve a cup or two of the pasta water. Drain the pasta and place it in a bowl. While the pasta is still really hot, slowly drizzle in the egg mixture, stirring the pasta the whole time. The sauce will become thick and should coat the pasta.

Steps to make Pasta Carbonara:
  1. Heat oil in a large pan and fry pancetta until crisp.
  2. Meanwhile- cook pasta in salted water. Strain and set aside.
  3. Add the parsley and butter to pancetta. Then add the pasta and cheeses. Toss to combine.
  4. In a bowl, whisk cream and egg yolk. Remove pan from heat before pouring over pasta.
  5. Toss again- sauce will thicken when cooked by heat of pasta. Season and serve with a little extra grated Parmesan.
  6. Very simple, classic pasta dish that is an absolute ripper. Some mushrooms could have worked in this dish too I think. Enjoy!

Splash in a little hot pasta water if needed for consistency. In a large saucepan, cook pasta according to package directions for al dente. Drain pasta, reserving pasta water; keep pasta warm. In same pot, cook bacon over medium heat until crisp, stirring occasionally. Pour the egg mixture over the pasta.
