- when cold fill with whipped cream and well drained pineapple or mixed berries roll like a swiss roll , you may need to use a knife to assist the rolling as it can stick a little (I find that makes it easier ) roll onto serving plate and dust with icing sugar if desired
- if using mixed berries simmer the reserved liquid with sugar to make a sauce to serve with it

To make pavlova roll, beat egg whites in large bowl of an electric mixer until soft peaks almost form. Beat egg whites in a large bowl until the peaks just fold over when the beater is removed. Lastly, although peaches and cherries can be used to top pavlova, it tastes best and most authentic with strawberries, raspberries, or kiwi- or, a combination.
