  8. Take 200 g stock fish and dry fish

The first time I ate Ogbono Soup with bitter leaves was at my Aunt, Ethel's home. She was already cooking it when I arrived. What you find above is a delicious plate of ogbono soup, I used just a handful of uziza leaves Although most people prefer this soup without leaves, the video below was made with bitter leaves. You can substitute different leaves for most Nigerian soups, this soup can also be made with fluted pumpkin leaves.

Instructions to make Ogbono Soup with Pumpkin leaves:
  1. Steam beef with seasoning cube, pinch of salt and pepper
  2. In a separate pot, team stock fish and dry fish with seasoning cube,pinch of salt and pepper
  3. Heat up another pot and add palm oil
  4. Heat for 30secs on low heat, add pinch of salt and ogbono
  5. Stir fry for few minutes to dissolve lumps
  6. Add water gradually and then the two steamed protein stock
  7. Allow to simmer for a while, taste for salt
  8. Add the diced pumpkin leaves and bring down after few seconds

Ogbono soup is also known as draw soup or apon among the Yoruba people. It is a Nigerian soup made from ground ogbono seed (bush mango seeds) added to pre-cooked meat or fish. I'll be adding Efinrin/Basil leaves at the end, I just love the aroma of Efinrin when incorporated into Ogbono, you don't have to use it though but I'm sure you'll love it if you do. Note: DO NOT cover the pot after the Ogbono has been added, covering the pot will make the soup watery and cause the Ogbono to lose its slimy consistency. Now turn down the heat then add Tiger Basil leaves.
