In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. In a medium bowl, whisk eggs and Parmesan until combined. In a small bowl, whisk together eggs and Parmesan; set aside. Use a long-pronged fork to twist the pasta on to the serving plate or bowl.

Instructions to make Spaghetti Carbonara:
  1. Boil the spaghetti as instructed on the packing
  2. Cook the bacon in a flat pan on low heat without any oil. Don't use salt or any subs because the bacon is already salty.
  3. Throw in the shittake mushrooms (diced) into the cooking bacon
  4. After around 3 - 5 minutes, pour in the cream. At this point, the spaghetti should be almost done.
  5. (When spaghetti is cooked, drain and put it aside)
  6. Now add the minced garlic, one tbls of parmigiano, and the chopped red onions to the mix in the pan and stir. Then turn down the heat to the minium value.
  7. Beat the eggs and then add to the mix when you're sure it is not pipping hot if not the eggs will solidify.
  8. After mixing for around 30 seconds mix the spaghetti and the contents in the pan. At this point the heat should be off. Stir well so as to prevent the eggs from cooking.
  9. Pour contents to dish for serving. Garnish with the rest of the parmigiano, black pepper and now add the fresh chopped tomatoes.
  10. Enjoy!

Serve immediately with a little sprinkling of the remaining cheese and a grating of black pepper. If the dish does get a little dry before serving, splash in some more hot pasta water and the glossy sauciness will be revived.
