Remove from the heat; stir in flour until smooth. Gradually stir in the broth, pumpkin, brown sugar, salt, pepper and nutmeg; bring to a boil.   6. Mix well and remove from the gas. Do not boil after adding coconut milk. Consistency should not be watery.
  7. Serve with chopped pudina (mint) leaves.

Allow to cool slightly, then slice in half and carefully scoop out seeds and pulp. Then instead of using cream, use coconut cream. This pumpkin soup recipe is creamy AND healthy!
