To get started with this recipe, we must first prepare a few ingredients. You can have fish pie using 13 ingredients and 9 steps. Here is how you can achieve it.
The ingredients needed to make Fish Pie:
- Take 5 large peeled potatoes diced
- Prepare 2 eggs
- Make ready 1 medium bag fresh spinach
- Prepare 1 onion finely chopped
- Prepare Extra virgin olive oil
- Prepare 1/2 pint double cream
- Make ready 2 good handfuls of grated mature cheddar or parmesan cheese
- Take Juice of 1 lemon
- Make ready 1 heaped tbsp English Mustard
- Make ready 1 large handful of flat leaf parsley finely chopped
- Take 1 Ib haddock and cod fillet no skin, pin boned & sliced in strips
- Take Salt and pepper
- Take 1 carrot chopped
Leave out the mustard and use a mix of fish that doesn't include a salty smoked variety. You could use haddock and salmon for example. Ensure there aren't any bones in the fish. Smoked fish imparts a lot of flavour so to make sure this dish is still tasty, stir in an extra handful.
Steps to make Fish Pie:
- Preheat oven to 230oC / gas mark 8. Prepare ingredients ready to start cooking
- Put potatoes into boiling salted water and bring back to the boil for 2 mins carefully add the eggs to pan for 8 mins (potatoes and eggs should all be ready at the same time)
- While potatoes cooking add olive oil to frying pan and fry off onion and carrots for 5 minutes until soft (stir often so they do not burn)
- While onion and carrots are cooking add spinach in colander above the boiling potatoes and steam spinach for 2 minutes (take off heat once done and leave to one side)
- Add double cream and turn up the heat as soon as it starts to boil take off heat and stir
- Add parmesan cheese & stir, add mustard, lemon juice and parsley and stir leave to one side
- Use a large Pyrex dish and place fish in the bottom, dry spinach a little and place in dish. Potatoes and eggs should be done by this point turn off heat and remove eggs (run under cold water to cool) peel the eggs and cut into 4 quarters place evenly in dish
- Pour over carrot, onion, cream mixture
- Drain potatoes and mash add a little salt and pepper and olive oil if needed. Spoon on top and use back of fork to create pattern place in oven for 30-40 mins until slightly browned and serve with green beans or peas and gravy or baked beans
This Creamy Fish Pie recipe was the one I cooked up on stage in a live-cookoff at the Big Feastival a few years ago (I added some crumbled up Piper's cheese and onion crisps on top for a little twist on that one). As part of the cook-off, we had to make a giant version so the audience could taste-test the recipe and vote for their favourite. And that audience was scarily huge (see below)! Combining fish, leeks, milk, butter, and potatoes, a fish pie is a one-pot supper dish. Some like to sprinkle a fish pie with grated cheese but this is optional, as is the addition of hard-cooked eggs seen in some recipes.
