  2. Take 4 cups mashed potatoes
  3. Get 4 oz Philadelphia chives and onion cream cheese

  5. Get 1 pkg real bacon bits
  6. Get 1 cup + more for top Shredded cheese… your choice and to your cheesy taste

Since the pierogi taste similar to pasta, we decided to try pierogi lasagna. We layered with mashed potatoes, cooked onions, and cheddar cheese. Justin's grandma sent me a recipe to make homemade pierogi, which we have done a few times. The recipe is delicious, but it takes a lot of work.

Instructions to make Pierogi Lasagna:
  1. Heat oven to 375°F. Cook noodles as directed on box. Meanwhile…combine potatoes, cream cheese spread, chives, 1/2 cup bacon and 1 cup shredded cheese.
  2. Place 3 noodles in a 13x9 baking pan sprayed with cooking spray….cover with 1/3 of the potato mixture. Repeat layers twice. On top cover with shredded cheese and the remaining bacon….cover.
  3. Bake 35 min. Uncover for the last 5 min. Let stand 10 min before cutting to serve.

Spread ½ c. of mashed potato mixture on bottom of the baking dish. This simple meatless pierogi casserole with onions, which includes lasagna noodles layered with cheese and mashed potatoes may not be as good as grandma's, but it's a nice alternative to frozen pierogies. This homemade pierogi casserole recipe is very economical, but unlike pierogies made from scratch, you wont spend all day in the kitchen. If you're a pierogi purest, simply leave the bacon out. My mom and I were talking about memories today.
