- Get 3 cups Dashi Stock OR Water

I picked up sliced pork butt (note: pork butt is in fact the shoulder cut) to make one of my favorites, butajiru (豚汁) often also called tonjiru. What goes in it really depends on which prefecture you're from, like most Japanese dishes, so I'll be showing you what I grew up eating. Butajiru / Tonjiru, A Japanese Comfort Food Miso soup in Japan is perhaps one of the most popular side dishes because it goes well with virtually every type of Japanese cuisine. Instructions to make Butajiru / Tonjiru:
- Prepare the Vegetables and Pork. Slice Pork thinly, and cut Vegetables and Tofu into small bite-size pieces.
- Heat Dashi Stock (OR Water) and Vegetables in a pot, and cook on a medium heat until vegetables are soft. Then add thinly sliced Pork.
- When Pork is cooked, add Miso and Tofu. Remove the soup from the heat just before it starts to boil.
- Sprinkle finely chopped spring onions, and serve. *Shichimi (Japanese Chilli Powder) is also recommended to add extra flavour.
Tonjiru (butajiru) is a variant of Japanese miso soup where the diluted miso is added after simmering small pieces of pork and vegetables in dashi. Chunky enough for a light lunch, double or triple the ingredients because everyone will want a generous share. We are making healthy, nutritious Tonjiru, pork miso soup with lots of vegetables. The root vegetables and pork will warm you up. Tonjiru (豚汁), which is also sometimes called Butajiru, literally means "pork soup" and is a mainstay at the dinner table during the frigid months of winter.
