Steps to make Tom's Tiramisu:
- make the espresso and add the marsala, let cool until needed.
- split the eggs.
- mix sugar and egg yolks with mixer until light yellow.
- mix in the mascarpone until smooth.
- whip the whipping cream until stiff peaks form, then fold into mascarpone mixture.
- whip the egg whites until stiff peaks form and fold into mascarpone mixture.
- put the sponge fingers or savoiardi in the espresso mixture and make a layer in a dish.
- put half of the mascarpone mixture on top of the drenched sponge fingers.
- add another layer of espresso drenched sponge fingers on top.
- put the remaining mascarpone mixture on top. and garnish with cocoa powder.
- enjoy :)
