I used the crawfish from our boil that I had frozen and it was perfect! It added another layer of flavor. I used regular corn without added sugar and semi pureed it instead of the cream style corn.

  5. Prepare 1 small pumpkin or calabaza
  6. Get 3 large white potatoes diced
  7. Get 3 cups chicken broth
  8. Get 2 cups water
  9. Prepare 1 large carrot diced
  10. Take 1 tsp salt
  11. Prepare 1 tsp cayenne pepper
  12. Make ready 1 tsp oregano
  13. Prepare 2 tsp paprika (1 to season shrimp)
  14. Get 2 sprig thyme
  15. Prepare 1 tsp garlic powder
  16. Take 1 stalk escallion or green onion

In a large Dutch oven, melt butter over medium heat. Bring the pot back up to a simmer. Use a stick blender to blend the soup until it is mostly smooth. BE CAREFUL not to spatter hot soup on yourself!

Instructions to make Crawfish soup:
  1. Season your shrimp and crawfish with paprika, salt, pepper
  2. In your soup pot πŸ˜€ add 1 tsp oil and cook shrimp for 1min on each side. Then remove and set aside. Add crawfish and cook for 2mins on each side or until turn red.
  3. Add 3 cups of chicken broth and 2 cup of water to the crawfish and bring to a boil. Then add diced carrots and pumpkin. Cover until the liquid comes to a boil and the pumpkin is soft.
  4. Once the pumpkins are cooked remove them and crush em and then put them back to the pot. (This is optional) Then add your potatoes, salt, coconut milk,cayenne pepper, jamaican pepper, black pepper,oregano, flavoured soup mix, shrimp and stir. Cover and let cook for 20mins or until the potatoes are soft/cooked.

Add the half and half and the remainder of the crawfish tails and corn. Stir well while heating for about five minutes more, then you're ready to serve. In a large pot over medium heat, combine potato soup, mushroom soup, corn, and cream cheese. Mix well, and bring to a slow boil. Stir in half-and-half, sauteed green onions, and crawfish.
