Instructions to make Tsukuné:
  1. Lavez et émincez finement la ciboule Dans un saladier, déposez le poulet haché, la chair à saucisse, le miso, le gingembre, la ciboule et la fécule de pomme de terre. Mélangez le tout à la main de façon à obtenir une préparation homogène.
  2. Avec les mains légèrement huilées, prélevez 2 bonnes cuillerées à soupe de préparation à la viande et façonnez 1 boulette ovales. Enfilez-la sur une pique bois, plate de préférence, Procédez de la même manière avec le reste des ingrédients pour obtenir 12 brochettes.
  3. Faites chauffer le barbecue, puis faites griller les brochettes 4 minutes. A l'aide d'un pinceau, badigeonnez-les de sauce yakitori, puis faites-les griller à nouveau 4 minutes, en les retournant à mi-cuisson. Badigeonnez-les encore de sauce et faites-les cuire 1 ou 2 minutes supplémentaires, jusqu'à ce qu'elles soient bien dorées.
  4. Nappez une dernières fois les brochettes de sauce et dégustez-les aussitôt en les trempant dans le jaune d'oeuf assaisonné de sauce soja
