- Make ready Pâte à pain
- Prepare 250 g farine
- Prepare 50 ml d'eau tiède pour diluer la levure

- Get 200 g beurre 1/2 sel

Kouign-amann is a french pastry with a croissant-like dough, laminated with butter and sugar for a flaky, rich treat with a caramelized outer crust. This is a perfect breakfast pastry or afternoon snack and today we are sharing the recipe. At their heart, kouign amann are laminated pastries just like croissants and puff pastry.
Instructions to make Kouign Amann:
- Diluer la levure dans l'eau tiède et laisser reposer 10mn. Mettre la farine et le sel dans le bol de votre robot pétrisseur. Mélanger vitesse 1 et laisser tourner à cette vitessejusqu'àla fin du pétrissage. Ajouter l'eau avec la levure, puis l'eau seule mais ne mettez pas tout d'un coup. Adaptez la quantité d'eau à votre farine. La pâte doit former une boule qui se détache bien des bords du bol pendant le pétrissage mais elle ne doit pas être trop sèche : elle doit coller légèrement aux doigts
- Après 10 à 15mn de pétrissage, couvrir et laisser reposer 2h.
- Au rouleau, abaisser la pâte en un beau rectangle. Applatissez également le beurre en rectangle plus petit que votre pâte. Il doit être de consistance plus ferme à égale à votre pâte, mais pas trop ramolli.
- Ajouter le sucre par dessus le beurre. Plier ensuite la pâte en 3, façon portefeuille. Le haut de la pâte vient recouvrir le 1/3 haut de la préparation. Puis rabattre le bas vers le haut.
- Tourner le pâton d'1/4 de tour et renouveler le pliage.
- Bien étaler au rouleau de manière à former un carré approximatif. Replier les 4 coins vers le centre. Recommencer une seconde fois. Mettre dans un moule recouvert de papier sulfurisé et laisser reposer 1h environ.
- Préchauffer le four à 180°. Faire des entailles sur le dessus du gâteau avant de l'enfourner pour 45 mn environ.
- Ne vous inquiète pas si après la seconde pousse, le gâteau a "rendu du jus". C'est normal, ça va permettre une belle caramelisation du gâteau 😜 bonne dégustation 😅
